Ingredients

  • 125g butter
  • 185 g sugar
  • 185 g self-raising flour
  • 4 tablespoons milk
  • 2 large egg
  • 2 grated lemon zest

Syrup

  • 6 tablespoons fresh lemon juice
  • 6 tablespoons a great icing sugar

Method

  • STEP 1 Preheat oven to 160 ° C.
  • STEP 2 Grease and line a baking sheet with parchment paper loaf.
  • STEP 3 Cream butter and sugar, beat in eggs.
  • Step 4 Add flour, lemon zest and milk and mix well.
  • STEP 5 Pour into the tin and smooth top.
  • STEP 6 Bake for 30-40 minutes.
  • STEP 7 Syrup: Mix lemon juice and sugar.
  • STEP 8 After removing the cake from the oven, prick the top with a metal skewer.
  • STEP 9 Pour over the lemon juice, while the cake is still warm.
  • STEP 10 leave until cool before removing from the tin.
