Ingredients

  • 3/4 cup butter
  • 3 / 4 cup sugar
  • 3/4 cup firmly packed brown sugar
  • 2 large egg
  • 2 teaspoons vanilla essence
  • 1 cup flour
  • 1 teaspoon of sodium bicarbonate
  • 1 teaspoon of cinnamon powder
  • 1/4 teaspoon salt
  • 2 3/4 cup flakes d ' oats
  • 1 cup dried cranberries
  • 1 cup nuts

Method

  • STEP 1 Preheat oven to 175C. Coat a baking sheet with nonstick cooking spray.
  • STEP 2 Mix butter, sugar and brown sugar in a large bowl of an electric mixer on medium speed until creamy. Add eggs and vanilla and mix until blended.
  • STEP 3 Combine flour, baking soda, cinnamon and salt in a small bowl. Add to the butter mixture and mix until smooth.
  • Step 4 Add oats, dried cranberries and walnuts.
  • STEP 5 Drop spoonfuls of the mixture of about 5 cm apart on baking sheets.
  • STEP 6 Bake for 10 to 12 minutes or until light brown.
  • STEP 7 Cool on baking sheets for 2 minutes. Place on rack to cool completely.

Notes

Use of old-fashioned oatmeal.
