Cranberry, Walnut and Oatmeal Biscuits

- 1 bowl
- 1 grill
- 1 electric mixer
Ingredients
- 3/4 cup butter
- 3 / 4 cup sugar
- 3/4 cup firmly packed brown sugar
- 2 large egg
- 2 teaspoons vanilla essence
- 1 cup flour
- 1 teaspoon of sodium bicarbonate
- 1 teaspoon of cinnamon powder
- 1/4 teaspoon salt
- 2 3/4 cup flakes d ' oats
- 1 cup dried cranberries
- 1 cup nuts
Method
- STEP 1 Preheat oven to 175C. Coat a baking sheet with nonstick cooking spray.
- STEP 2 Mix butter, sugar and brown sugar in a large bowl of an electric mixer on medium speed until creamy. Add eggs and vanilla and mix until blended.
- STEP 3 Combine flour, baking soda, cinnamon and salt in a small bowl. Add to the butter mixture and mix until smooth.
- Step 4 Add oats, dried cranberries and walnuts.
- STEP 5 Drop spoonfuls of the mixture of about 5 cm apart on baking sheets.
- STEP 6 Bake for 10 to 12 minutes or until light brown.
- STEP 7 Cool on baking sheets for 2 minutes. Place on rack to cool completely.
Notes
Use of old-fashioned oatmeal.
