Ingredients

  • 4 egg
  • 3/4 cup sugar
  • 1/2 cup of lemon juice
  • 2 teaspoons of zested lemon zest
  • 125g butter chopped

Method

  • STEP 1 Location eggs and sugar in a heatproof bowl.
  • STEP 2 Place the bowl over a pan of barely simmering water and whisk constantly until the sugar has dissolved.
  • STEP 3 Add lemon juice, lemon zest and butter. Beat the mixture for 20 minutes until smooth and the butter is melted and thickened enough to coat the spoon. Do not let the mixture boil as it will curdle.
  • Step 4 Pour the hot mixture into hot sterilized jars and seal immediately.
