Ingredients
- 270 g chopped pitted dates
- 1 teaspoon of sodium bicarbonate
- 1 teaspoon of vanilla essence
- 60 g butter
- 185 g self-raising flour
- 125 g soft brown sugar
- 2 egg
sauce
- 90 g butter
- 140g soft brown sugar
- 2 tablespoons molasses
- 185 ml cream
Method
- STEP 1 Preheat oven to 180C.
- STEP 2 Lightly grease or spray a 12-hole muffin pan.
- Step 3 dates Place and 250 ml of water in a saucepan, bring to a boil, then remove from heat and stir in the baking soda and vanilla.
- Step 4 Add the butter and stir until dissolved.

Notes
You can make this out to 12 puddings, or make them larger and reduce the number.
