Ingredients

  • 270 g chopped pitted dates
  • 1 teaspoon of sodium bicarbonate
  • 1 teaspoon of vanilla essence
  • 60 g butter
  • 185 g self-raising flour
  • 125 g soft brown sugar
  • 2 egg

sauce

  • 90 g butter
  • 140g soft brown sugar
  • 2 tablespoons molasses
  • 185 ml cream

Method

  • STEP 1 Preheat oven to 180C.
  • STEP 2 Lightly grease or spray a 12-hole muffin pan.
  • Step 3 dates Place and 250 ml of water in a saucepan, bring to a boil, then remove from heat and stir in the baking soda and vanilla.
  • Step 4 Add the butter and stir until dissolved.
  • STEP 5 Sift the flour into a bowl, add sugar and stir. Make a well in the center, add the composed date and eggs, and mix until just combined.
  • STEP 6 spoon the mixture into the prepared pan and bake for 15-20 minutes, or until a skewer comes out clean.
  • STEP 7 Meanwhile, to make the sauce, combine all ingredients in a saucepan and stir over low heat for 3-4 minutes. Bring to a boil, then reduce heat and simmer for 2 minutes.
  • STEP 8 To serve, turn the puddings overlooking the serving plates, pour the sauce over and serve with ice cream or cream.

Notes

You can make this out to 12 puddings, or make them larger and reduce the number.
