Ingredients

  • 6 egg
  • 1 cup self-raising flour
  • 1 1/2 cup tasty grated cheese
  • 3 grated zucchini
  • 1 teaspoon of ginger
  • 1 grated carrot
  • 1 chopped onion
  • 2 crushed garlic clove
  • 1 pinch salt and pepper
  • 2 tablespoons dried tomatoes
  • 1 pinch basil

Method

  • STEP 1 Preheat oven to 180C and grease a skillet Lamington.
  • STEP 2 Beat eggs lightly with a whisk, then add the other ingredients.
  • STEP 3 Pour the mixture into the pan and bake for 20 to 30 minutes, until a knife inserted comes out clean and slice into the mixture comes away from the edges.

Notes

Serve hot or cold with salad. It can be used for kids lunches as a healthy alternative.
