  • 1 slow cooker

Ingredients

  • 600g chuck steak (beef) into cubes
  • 300 g chat potatoes quartered
  • 1 brown onion, finely chopped
  • 210 g Thai massaman curry paste
  • 2 tablespoons flour
  • 2 cup chicken broth (liquid)
  • 400 ml coconut cream
  • 2 tablespoons fish sauce
  • 1 tablespoon lemon juice
  • 1 TBS brown sugar
  • 2 cup white rice

Method

  • STEP 1 Place onion and potatoes in slow cooker. Add the curry paste, coconut cream and stir.
  • STEP 2 Add the chicken stock, fish sauce, lemon juice and brown sugar. Stir again.
  • STEP 3 Place flour in a plastic bag then add the steak and stir until meat is coated in flour. Add steak to slow cooker.
  • Step 4 Cook in slow cooker on low for 8 hours. Serve with rice.

Notes

I like to cook on high for 1 hour 7 hours down. Valcom Massaman is an aromatic mild Thai curry. Unlike Thai Red and Green Curry has more of a liquid consistency. If you prefer a curry slightly thicker omit 1 cup of broth. I use 2 teaspoons of powder with water 2 cup chicken broth.
