- 1 slow cooker
Ingredients
- 600g chuck steak (beef) into cubes
- 300 g chat potatoes quartered
- 1 brown onion, finely chopped
- 210 g Thai massaman curry paste
- 2 tablespoons flour
- 2 cup chicken broth (liquid)
- 400 ml coconut cream
- 2 tablespoons fish sauce
- 1 tablespoon lemon juice
- 1 TBS brown sugar
- 2 cup white rice
Method
- STEP 1 Place onion and potatoes in slow cooker. Add the curry paste, coconut cream and stir.
- STEP 2 Add the chicken stock, fish sauce, lemon juice and brown sugar. Stir again.
- STEP 3 Place flour in a plastic bag then add the steak and stir until meat is coated in flour. Add steak to slow cooker.
- Step 4 Cook in slow cooker on low for 8 hours. Serve with rice.
Notes
I like to cook on high for 1 hour 7 hours down. Valcom Massaman is an aromatic mild Thai curry. Unlike Thai Red and Green Curry has more of a liquid consistency. If you prefer a curry slightly thicker omit 1 cup of broth. I use 2 teaspoons of powder with water 2 cup chicken broth.
