ingredients

  • 1 1/4 kg jap pumpkin cut peeled in pieces
  • 2 medium potato peeled quartered
  • 1 brown onion quartered
  • 3 teaspoons Vegeta gourmet Stock powder
  • 2 teaspoons curry powder
  • 4 cup hot water
  • 1 teaspoon * pepper to taste
  • 1 cup cream

Method

  • STEP 1 Add the pumpkin, potatoes and onions in slow cooker.
  • STEP 2 Dissolve the Vegeta in 4 cups of warm water and pour over the vegetables.
  • STEP 3 Sprinkle with curry powder and pepper powder.
  • Step 4 Turn slow cooker on high for 6-8 hours.
  • STEP 5 Once cooked, blend until smooth. Add the cream and stir.
  • STEP 6 Serve with crusty bread or dinner rolls.

Notes

Recently I used half a tank of the new cream of Philadelphia. It reduces the fat content and has a divine flavor. I also omitted the curry powder was still delicious. Use Vegeta or vegetable gourmet store.
