Ingredients

  • 500 g rhubarb broken into pieces
  • 1/2 cup sugar
  • 1 tablespoon grated orange zested
  • 1 pinch salt

Crumble

  • 1/2 cup brown sugar
  • 1/2 cup oats rolled
  • 1/2 cup car -increase flour

Method

  • STEP 1 Combine rhubarb, sugar, orange zest and salt in a buttered casserole dish.

Notes

I like my rhubarb mixture of a bit 'on the side of the cake, as a contrast to the dressing, but for a sweeter result it is possible to increase the amount of sugar in the mixture of rhubarb to two thirds of a cup. Cut the rhubarb into 2cm pieces.
