Ingredients

  • 425 g mango canned in syrup
  • 500 g mixed dried fruit
  • 1/2 cup water
  • 1 1/2 teaspoon bicarbonate sodium
  • 1 1/2 cup self-raising flour
  • 2 lightly beaten egg

Method

  • STEP 1 fat to 15 cm x 25 cm loaf pan and line the base and sides with baking paper.
  • STEP 2 Add the mango slices undrained, mixed dried fruit and water in a large pan.
  • STEP 3 Bring to a boil and simmer, uncovered, for 1 minute. Allow to cool.
  • Step 4 Stir in eggs and combined baking soda and flour sifted.
  • STEP 5 Mix well and pour mixture into prepared pan.
  • STEP 6 Bake in moderately slow oven, about 160C for 1 hour or until done.
  • STEP 7 Cool cake in pan.
