Ingredients

  • 75 g self-raising flour
  • 75 g flour
  • 90 g oatmeal
  • 70 g desiccated coconut
  • 140g firmly packed brown sugar
  • 130g pitted dates
  • 95 g chocolate chips with milk
  • 125g cooled melted butter
  • 2 lightly beaten egg
  • 1 teaspoon of milk

Method

  • STEP 1 Preheat oven to 180 ° C. Brush a skillet slab of 17 cm x 27 cm with melted butter to grease lightly.
  • STEP 2 Sift the combined flour in a bowl. Add oats, coconut, sugar, fruit or dried fruit and choc bits, and stir until combined.
  • STEP 3 Make a well in center and add the melted butter, eggs and milk. Using a wooden spoon, stir until well combined.
  • Step 4 spoon the mixture into the prepared pan and smooth the surface with the back of a spoon.
  • STEP 5 Bake for 20 minutes or until golden brown and firm.
  • STEP 6 Remove from oven and set aside, allow to cool completely. To serve, cut into squares.

Notes

If you do not like pitted dates you could try raisins, nuts or simply double the choc bits.
