Method

  • STEP 1 In a large salad bowl, put the rice, shallot slices, diced bell pepper, currants, and seeds.
  • STEP 2 In a jar with a screw cap, place the sunflower oil, soy sauce, lemon juice and garlic.

Notes

Pepitas are salted, roasted pumpkin kernels. Use sunflower or olive oil.
